Have you heard of Japanese pancakes? It’s a type of soufflé pancake originating in – you guessed it – Japan, and boy are they delicious.
Read below for the recipe – and better yet, a place to get this fluffy breakfast or anytime treat without cracking a single egg. We’re not a recipe blog – and there’s more to this article than meets the eye.

First, here’s the recipe.
Ingredients
- Two eggs
- 2 Tbsp sugar
- 1 1/2 Tbsp Whole Milk
- Dash of real vanilla extract
- 1/2 tsp baking powder
- 1/4 Cup Cake Flour, or 1/4 Cup AP Flour w/ 1 1/2 tsp corn starch
- Butter or oil for pan
- 2-4 Tbsp Water
Directions
Separate the eggs. Add milk and vanilla extract to a bowl with egg yolks and whisk thoroughly. Sift cake flour (or AP flour + corn starch) into the bowl with baking powder and whisk until just combined. Next make a merengue with the egg whites by beating with a mixer to stiff peaks. Don’t do this by hand people, that sucks! Add the sugar to the mixture about halfway into the process.
Heat a non-stick pan or skillet with a lid on very low heat with some butter or oil. Very low! Gently fold the merengue into the batter until fluffily combined.
Pour a bit of the batter into the pan, about 1 or 2 tablespoons. Let that solidify on the bottom and add another tablespoon or 2 to create a somewhat high pancake. You can do this for more than one at a time depending on the size of your pan, but I’d start with 1.
Add a tablespoon or two of water to the pan and cover. Remember to keep the heat very low. Let that go for just a minute or two, and then add another dollop of batter to the top.
Cover and steam for another 5-6 minutes or until GBD (golden, brown and delicious) on the bottom. Flip each cake very slowly being careful to gently lower the uncooked side onto the pan. Add more water and cover for another 5 minutes or until GBD.
Plate and serve with powdered sugar, syrup, or whatever you’d use with pancakes.

I’m going to be honest here. Soufflés are really hard, and not for the feint of heart. If it doesn’t work out for you, or if you just don’t care to try, I have another option.
